Turkey Burgers & Guac

Turkey burgers never go out of style. Who turns down a nice juicy burger?

This recipe is a scrumptious way to get turkey burger skeptics to fall in love and never go back…

Ingredients:

  • Ground turkey
  • Pepper jack cheese
  • Shredded cheese (any kind)
  • Red Onion
  • 2 table spoons Oregano
  • 1 table spoon Crushed red pepper flakes
  • Salt & pepper
  • 1 teaspoon ancho chili (or cayenne) for heat
  • 1 teaspoon Tamari
  • 1 table spoon olive oil

The Burger Process:

Step 1: Hand mix the ground turkey, shredded cheese, red onion, & spices together in a large bowl. Then, form into patties! (Remember they will shrink!)

Step 2: Put into fridge for at least an house to let the flavors set & develop.

Step 3: Heat olive oil in a skillet on high.

Step 4: Place patties in skillet and get a good color on both sides.

step 5: Once second side is almost done, lower heat, and put a lid on the skillet. Put a splash of water in pan. The steam will help cook the inside of the burgers while keeping them moist. Yummy!

Step 6: Before burgers are done, add cheese! Replace lid. Once cheese is melted the burgers are ready!

Turkey burgers are perfect smothered in guacamole! Serve with Corn Relish side dish.

Guacamole

IMG_3741Avocados are my favorite ingredient.  I mean, come on, I use avocados to make frosting for a chocolate cake!  They a full of amazing healthy oils that our bodies need!  The good fat ya’ll! Once you make this guac recipe I promise, you’ll never go back to your old ways.  And if I’m wrong… then you don’t know good guac 🙂

Ingredients:

  • 2 avocados
  • Fresh salsa (you can use store bought- I usually make my own but thats a recipe for another day!)
  • 1/2 table spoon garlic salt
  • 1/2 table spoon lemon juice
  • teaspoon salt & pepper
  • 1 table spoon Olive oil mayo (you can make without adding this ingredient and its just as good!) 

Step 1: Cut open avocados and put into a bowl.  People have heard of using knifes to take out the pit in the center, and if you don’t know what you are doing, please do not try an attempt what they do on the food network. It’s a lot easier in my opinion to just push the avocado together and the seed pops right out!

Step 2: Start to chop up the avocados in the bowl using a spoon, then add in the salsa (again, I eyeball but I’d say 1/2 cup range).  And start mixing together until you get a nice creamy consistency!

Step 3: Add garlic salt, salt & pepper, and lemon juice: mix together.  Optional : to add in mayo.  * taste test, and balance out accordingly to your taste buds 🙂

Heathy Chocolate Pie

We all need something sweet from time to time. And, It’s comforting to know that we can make healthier sweet options to get us through the holiday season approaching us full speed. If you are someone who has to bake for family functions, this is going to be a classic “crowd pleaser recipe.”

* You will need a food processor to make this recipe*

Ingredients:

  • 1) 3 tbsp Unsweetened Cocoa Powder
  • 2) 1 small avocado
  • 3) 1 cup almond or cashew butter
  • 4) 2 cups chopped pecans
  • 5) 10 pitted dates
  • 6) 1 tbsp cinnamon
  • 7) Handfull of strawberries
  • 8) 3 tbsp pf olive oil
  • 9) 1/2 cup Earth Balance butter

Directions:

1) First we make the crust of the pie. Add the pecans into processor and pulse, then add dates, cinnamon, and olive oil.

2) Form the crust into a 9 inch pie plate.

3) Next: Filling. Add avocado, almond or cashew butter, and blend until smooth/creamy.

4) Add in cocoa powder. Blend.

5) Add 1/2 cup melted earth balance butter. Blend.

6) Fill into pie crust. Put into refrigerator and let chill for 3-4 hours.

7) Once ready to serve, slice up some strawberries, to top off the pie.
